Vacuum Transducer for Motor Speed Control

I don't know if the vacuum range would be right, but automobiles are
full of vacuum diaphragms.  There are tiny ones used for EGR valves
and huge ones used for power brakes.  Consult your local junkyard.

The AC motor-speed controller may be as much of a challenge as the
vacuum sensor.  As a first iteration, you might want to try a vacuum
operated on-off switch rather than an infinitely-variable controller.
A triac should do the job.  The inertia of the motor might be
sufficient to smooth out the variations.
