Restoration vs. Reconstruction

What are thoughts dealing with taking an instrument back to the way it
was originally built, as compared to modifications to make it have more
"sounds" or stops?

It would not seem wrong to add pipes or a xylophone to a simple "A"
piano, but it would be pushing the envelope to change a Seeburg F to an
"O" roll system plus percussion.  Theatre organs seem to be exempt from
this as "the more the better", even if the organ was built much smaller
originally.

When restoring a machine, how much consideration should be given to
restoring it to the condition intended when it was originally built?
I suppose it would depend on the particular instrument.  I would like
thoughts and input on this decision.
