Replacing Aeolian Duo-Art Valve Pouches

There has been a lot of talk on here lately about valve material --
mostly "to seal or not to seal" it.  I am replacing the valves in my
Aeolian Duo-Art and I am going to use Columbia's "Morton leather."
Any suggestions, though, on the thickness?  They offer it in several
different thicknesses and I think since the Duo-Art already has some
issues with signal response that I need the thinnest material I can
find.  Also, how much should I buy?  I'm thinking 5 square feet.
