There may be a better suggestion on here as well, but for carousel
carvings you should talk to the Carousel Works in Mansfield Ohio.
They are a prominent restorer and copier of carousels.  In fact in the
once-deteriorating downtown area of Mansfield they have single-handedly
brought back downtown by building a NEW carousel and protective building
and made it a prominent tourist attraction.
