Just seen this film on UK Channel 4.  The street organ is used to mask
the alarm bell and machine-gunning of door locks when a safe-deposit
vault is breached.  When the operator is (twice - two different ones)
machine-gunned, the organ tune runs down like a record.

Takes some ingenuity to transpose the pipes up and down according to
the speed of the handle ! :-)
