The standard finish for older wood pipes is shellac.  As long as the
inside of the pipe is sealed -- usually with glue during construction
-- the finish is for appearance only and does not affect the tone.

Finished pipes are easier to keep clean.  No standard finish eliminates
the shrinkage and expansion of the wood, it just slows the rate more or
less depending on what you use.
