Finishing Poplar Base for Welte Roll Changer

I'm building a new wooden base out of poplar for a Welte organ roll
changer and want to apply a deep brown walnut finish to it but I am
concerned about getting a blotchy, uneven look if I use something
like Minwax stain.

Would using aniline dye give me an even solid color?  If so, should
use water or alcohol based dye?  Can someone recommend a brand/source
for the dye?  Could I put a top coat of stain over the dye finish?
I want to finish it off with satin poly.  Any suggestions?
