Duo-Art vs. Ampico

I'd like to add another consideration to your checklist.  Pity the poor
technician who needs to repair or adjust something in the action on a
grand piano.  With the Duo-Art it's a major production to remove and
install the action.  Ampico's configuration won't scare techs away.
Welte, I haven't seen a grand to offer advise.

For the sheer serviceability, I'd go with Ampico.  And so you won't
need to worry so much about rolls, add E-Roll.
