Piano Sound Synthesizers for Playing MIDI Files

I enjoy listening to the MIDI recordings of early piano rolls, but
have noticed that the long, sustained notes seem to sound more like
they are coming from an electronic organ than a piano.  When striking
a note on my real piano (a 1920 Werner), the sound fades away after
a few seconds, but the same note played on the MIDI players I have
remains at full volume.

Is this a property of all MIDI players, or do some of them account for
the natural fall-off in the amplitude of a piano note?
