Converting Audio to MIDI

As a newbie I hope the following posting regarding MIDI file
conversion is not a recent topic repeat.  If it is please accept
my apologies.  I have looked through the archival index to find the
discussions were nearly nine years ago.  I am sure there has been
vast changes since then.

I am wanting to know what the general consensus is regarding the
software to use for converting audio recordings into a MIDI format
files enabling one to manufacture punched music rolls for a 20-note
busker organ.

I will appreciate any information offered as it will be 100% more
than my understanding.
