Which Reproducing Piano to Rebuild

I have been wanting to rebuild a reproducing grand for a few years now
and I have found two pianos but need some help picking between the two.

One is a Steinway XO with almost all the piano work done.  The piano
was refinished a few years back and is in quite good condition.  The
only drawback is that the Duo-Art system was removed and boxed up.
I know the pump is missing but other then that there is no other way
of knowing what else is missing.  I did have a donor Duo-Art system
off a junk Weber I could use.

The other piano is a Baldwin grand with a Welte system in it.  It's
a French provincial cased 6'3 grand, in original unmolested condition,
so that is good but that also means a lot more work for me.  Between
the two will one have more value at the end of its restoration?

I know Aeolian put out a lot more popular music but is the Baldwin
a rarer instrument?  Any help would be great.
