I would recommend first of all:

1. The Fairground Organ: Its Music, Mechanism and History
by Cockayne, Eric V., David & Charles, 1970.

While it is not new, it does a great job of describing pre-MIDI
instruments.

My other strong recommendation is:

2. Jüttemann, Herbert: Waldkirch Street and Fairground Organs.
   Rufforth, York: A.C. Pilmer, 2002.

Over 330 diagrams, tables and illustrations in the text, together
with 50 colour plates showing organ facades of historic instruments by
Ignaz Bruder, Gebrüder Bruder, Wilhelm Bruder Söhne, A. Ruth & Sohn,
Gavioli & Cie., Limonaire Frères, Alfred Bruder, Carl Frei.

Through Google I found several copies of each listed on Abebooks.com
some in England or Germany, and at least one of each in the USA.
I would rate both as _great_ books.
