Harvey,  To answer your question about "reed" stops on a pipe organ,
the answer in short is "Yes".  In general, reed stops really do have
vibrating reeds in them.  The shape, size, dimensions of the reed and
the resonator (the long tube portion that is visible) all determine
the final tone of the stop, i.e., whether it sounds like a trumpet,
oboe, or some other reed stop.  In the upper end of the rank of pipes,
the proportions get a little small.

So the pipes no longer have reeds in them and they look just like
ordinary flue pipes.  But with proper construction and voicing, they
will sound just like reeds.  I am not aware of any "reed" ranks which
are totally made with flue pipes.  Maybe someone else can shed light
on this.
