Hi Fox,  I don't have much time to go into detail, but everything in
the piano should be removed before you start refinishing the cabinet.
Also, remove all pieces that attach to the cabinet, like the fallboard,
cheek blocks, flip board, legs, etc.  What cannot be easily removed
(keybed, plate, etc.) should be masked off.

I started refinishing piano cabinets in a 8' X 17' room, so it can
be done at home.  Commercial refinishers are expensive, and you'll
probably find that only a handful will take on a piano -- which they
usually want 'gutted' before they'll start.

Most fallboard decals are available, especially for the more common
makers like Aeolian.  But be sure to measure them and take a picture
if possible.  That will make finding the correct replacement decal
much easier.

I like "Minwax" stains (oil-penetrating) and Parks lacquer.
