It would be perfectly possible (probably, bearing in mind that 88-note
rolls are appreciably wider than 58-note ones) with instruments that
use a brass tracker bar to replace it with a 88-note one, but difficult
to do it in a reversible way on those that have a wood one integral
with the primary valve chest.

Even if you succeed, it will only play 58 of the 88 notes, leaving a
shortfall at the ends of 30 notes.  And, of course, piano rolls tend
to use rather short holes, as required by piano notes, rather than long
ones as needed for organs, as those of us who have cut 65-note piano
rolls down to 58-notes with wallpaper trimmers have found out!
