There is a program called Akoff Music Composer which claims to do what
you want, including recognising chords:  http://www.akoff.com/

You would need to record the analog signal to your hard drive as a WAV
file first.  Almost any sound card can do this, usually with a utility
which comes with the card, or with Goldwave: http://www.goldwave.com/

Both of these are low cost, and I think there is a free version of
Goldwave.
