Veneer and Core Wood for Pianos

What dimensionally stable currently available wood would be a good
choice for replacing major chunks of the core wood of an old piano?
I occasionally see web sites describing major casework like this,
but I have only read much about the veneer, not the wood underneath.

Also, on a related topic, any suggestions for finding veneer that
might almost match that Seeburg flecked oak finish?
