Converting Audio to MIDI

Has anyone found a good program for audio to MIDI conversion?  I've
tried several trial versions of programs found on the Internet but
none were particularly good for polyphonic music such as piano.
The best one I've found so far is "Composer" from AKoff, a Russian
company, but it leaves a lot of work to be done to make a decent
sounding MIDI file.

We are planning to sell our Tel-Electric piano and roll collection,
and before we sell it we would like to transcribe some of the better
music to MIDI without building an interface to its electrical contacts.
The collection includes quite a few rags, cakewalks and similar music,
with at least one rag that was previously unknown -- "The Interesting
Rag", composed and hand played by Ben Light.
