Transcribing Estey Player Organ Rolls

Hello, all!  I am a professional organ builder, and am new to MMD,
so please excuse me if my question is somehow anathema!

Does anyone have a method or system for transferring Estey organ
rolls to MIDI format?  I have quite a few rolls in my collection for
an organ that still exists, but is not presently working.  The rolls
are not on acid-free paper, and they are going to pieces.  I have had
them examined by a preservation library, and their recommendation is
to transfer the data, as it probably isn't possible to preserve the
rolls in useful condition.

I know the registrations that were set on the Estey player, and could
probably approximate them on another Estey I am working on.  I had the
player functioning about 30 years ago, and still have it, although it
is not connected at present.  The system included both "old" and "new"
music.

I also have original copies of the Estey roll catalog, with their
wonderful descriptions of the pieces.  It would be great to save the
music and have it usable again!  Can you all recommend a course of
action?
