Refinishing Rosewood

In the past while refinishing the player pianos I have rebuilt I have
always used a polyurethane finish.  As I am looking to refinish an 1881
Eastlake Victorian Steinway upright piano that is made of rosewood,
I would be interested if anyone had a suggestion how to refinish this
piano.

It looks as if the finish has been removed, but they also took off the
red hue that is normally within the rosewood.  I would be interested in
suggestions as to how I should proceed to refinish this piano to do it
justice.
