Gluing Leather to Leather

I'm restoring my Wurlitzer Theater Organ including re-leathering.  Have
been using hot glue and fish glue.  I need advice for the most suitable
glue for primary pneumatics, where leather must be glued to leather and
retain a supple joint.  Any advice please?
