Mike,  It is possible to burn your own MIDI files to an EPROM chip
(Hofbauer cartridge).  There is one man in Germany who can supply you
microboxes with your own music for reasonable prices; maybe that's
easier than a whole conversion of the organ to MIDI with the chance
of damage to the old system.

The name of this man is Ullrich Schaefers, a former employee of the
Hofbauer factory, http://www.ullrichschaefers.de/  The web site is in
German, but Ullrich can write and read English.  He also has a large
collection of music ready to play.
